Okonomiyaki recipe, a well known Japanese classic ?⬇️
Ingredients for 2 servings:
100ml water (or 100ml dashi broth and omit dashi powder).
3 tsp dashi powder
100g flour
250g cabbage (pointed cabbage is best, alternatively white cabbage)
2 eggs
Spring onions to taste
100g thinly sliced meat or bacon (or vegetables of your choice, e.g. broccoli)
Sauces:
Kewpie mayonnaise
Okonomiyaki or Okonomi sauce
Toppings:
Beni Shoga (red pickled ginger)
Aonori (green powdered seaweed)
Katsuobushi (bonito flakes)
Preparation
1. put the water, flour, dashi powder, eggs and spring onions in a bowl and mix well.
2. Cut the cabbage into thin strips and add to the mixture. Stir just until it forms a mass. 3.
3. Now pour the mixture into a pan and shape into a circle. Place the meat on the top side and fry the bottom side for about 5 minutes until golden brown.
4. When the desired colour is reached, turn over once, put the lid on and fry again for about 5 minutes.
5. serve with Okonomiyaki sauce and Kewpie mayonnaise. Optionally garnish with Aonori, Katsuobushi and Beni Shouga.
